A few years ago I did a one week stay in Orlando, of course back then Disneyworld, with the Magic Kingdom and Epcot Center was the main highlight, but now you could also visit Universal Studios, Gatorland, the Holy Land Experience, Seaworld and so much more.
We stayed in a really nice little 3 star hotel on the one of the main strips close to everything so it was only a short drive to the attractions or even downtown if we wanted, and I remember deciding we didn't want to eat fast food all the time, but we couldn't cook, so several nights we'd go into Publix and get a grilled chicken and some salad with a bottle of water and just sit in one the parks having an evening picnic.
At the time I remember the cost was about the same as flying to New York which would have been my other option but I wanted the sun since the UK had just come out of a cold winter whereas Florida was going into summer.
